Sweet & Sour Tofu
Recipe makes 2 portions. This can be factored up to make more portions as needed. Consider bulk cooking and freezing the extra to save time, energy and electricity.
Sweet & Sour Tofu
Ingredients
1 block tofu cubed *
1 tbsp soy sauce *
1/2 tbsp apple cider vinegar *
1 tsp sesame oil *
1-2 tbsp of flour *
1 tbsp rapeseed oil *
1/2 jar grilled peppers thinly sliced *
1/2 jar tomato paste *
1 tbsp sugar *
1/2 tin pineapple (including juice)
50-100ml water
100-120g rice (we have 4 kinds to choose from, consider mixing long grain brown and wild 50/50 for extra nutrients) *
Optional: extra vegetables from the fridge eg carrot, leafy greens, cabbage

Method
Whisk together soy sauce, apple cider vinegar and sesame oil.
Marinate cubed tofu for 5-10 mins.
Drain tofu, reserve liquid.
Lightly coat tofu with flour.
Heat wok (or large pan) with rapeseed oil.
Stir fry tofu until browned, remove from wok and set aside.
Stir fry optional vegetables and peppers.
Add tomato paste, reserved marinade, sugar and pineapple.
Heat through. Add water to constancy desired.
Add tofu, heat through and serve with rice.
