Simple Tofu Scramble Recipe

A wonderfully decadent weekend brunch at home, or picnic item as the weather warms up. Serves two hungry adults.
Ingredients
1 block of extra firm tofu
2 spring onions
1 large garlic clove
1/2 large red bell pepper, or other similar vegetable in your fridge
1 tbsp olive oil
1/2 tsp turmeric powder
1 tbsp soya sauce
Small handful of fresh coriander or flat leaf parsley
Hot sauce, salt and pepper to taste

Method
In a large mixing bowl, crumble the tofu with your hands and mix in the turmeric powder.
Dice the red pepper, spring onion and garlic and add to a pan with the olive oil and gently sauté to soften. Roughly 5 min.
Add the crumbled tofu and the soy sauce to the pan and stir to combine over a medium heat for a further 5 minutes. Remove from heat, add the coriander and serve. If like us you are not using a non-stick pan then you’ll need to scrape the bottom of the pan as you stir, but these are the best bits!
Serving suggestions
Place on a thick slice of toasted sourdough bread. Did you know, that Frizzante (Hackney City Farm’s Cafe) sell most delicious seeded sourdough they make themselves?!
You could also use pita bread, or a wrap (breakfast burrito anyone?). The scramble is delicious warm out of the pan, but is also quite tasty at room temperature or cold.
