Chocolate Cola Cake

To celebrate Karma Drinks being our Producer Spotlight for August 2021 we adapted this James Martin recipe for Get Loose.

The recipe makes 8 generous slices!

Ingredients for the cake

  • 250g butter + a bit extra for greasing

  • 250g flour 

  • 2 tsp baking powder

  • 300g sugar

  • 3 heaped teaspoons of cocoa

  • Pinch of bi-carbonate soda

  • 200ml Karma Cola

  • 75ml milk

  • 2 eggs, beaten

  • vanilla extract*

Ingredients for the icing

  • 60g butter softened

  • 200g icing sugar sieved*

  • 2-3 tbsp cocoa

  • 2 tbsp Karma Cola

  • 1tsp cacao nibs for decoration

Instructions

  1. Pre-heat the oven to 180oC / 350oF / Gas Mark 4. Grease 24cm loose bottomed cake tin.

  2. Sift the following ingredients into a bowl: the flour, baking powder, sugar, cocoa and bi-carb.

  3. Gently melt the butter and cola drink together in a pan, then add to the dry ingredients, together with the milk, eggs and vanilla extract. Mix gently but thoroughly. Tip into the cake tin. It is quite a wet mixture.

  4. Bake for 40 mins or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave to cool in the tin on a wire rack for 15 mins. 

  5. To make the icing, beat butter, icing sugar and cocoa together in the bowl until blended. Beat in cola to combine and achieve desired consistency. Spread on cake and sprinkle with cacao nibs.
