Anchovy & Mushroom Pasta
Recipe makes one portion but can easily be factored up to make extra.
Ingredients:
40g mushrooms
4 sundried tomatoes
1 tsp olive oil
1 finely chopped clove garlic
50g dry weight fusilli
3 anchovies finely chopped
½ a tin fava beans (drained & rinsed)
salad / baby spinach leaves (any kind)

Method:
Cook pasta in boiling water for 6 mins.
Meanwhile warm tomatoes, mushrooms, garlic in the oil in a pan for 3 mins.
Mix ingredients (except salad) with 1tsp olive oil.
Serve on a bed of salad.
