Spicy Tomato & Lentil Soup
Recipe makes one portion but can easily be factored up to make extra.
Ingredients:
1 carrot chopped
½ a red onion chopped
1 clove garlic
½ tsp cinnamon
½ tsp cumin seeds
½ tsp turmeric
1 tsp olive oil
1 tsp tomato paste
½ jar roasted peppers chopped
300ml veg stock (½ tsp stock)
100ml tinned coconut milk
100g tinned chopped tomatoes
30g dried red lentils
Spinach or other seasonal greens

Method:
Fry carrot, onion, garlic and spices in oil for 5 mins
Pour in stock, coconut milk, tinned, tomatoes, lentils and peppers.
Bring to boil and simmer for 12 mins or until lentils are cooked.
Remove from heat and blend
Add winter greens, stir through to wilt.
