Quinoa Eggs with Dukkah
Recipe makes one portion but can easily be factored up to make extra.
Ingredients:
Quinoa 50g
Eggs boiled or poached 1 or 2 (depending how hungry you are!)
Roasted peppers ½ jar
Dukkah (see simple recipe here)
Optional salad leaves / chard / spinach (depending on season)

Method:
Boil quinoa for 15 minutes and drain.
Make Dukkah if not already in the cupboard.
Poach or boil the eggs.
Arrange quinoa, salad (if using) eggs and peppers on plate, sprinkle liberally with Dukkah.
Any remaining Dukkah can be kept in a jar for future meals.
